There’s no denying it, we’re a little beetroot obsessed

It’s been one beetroot recipe after another over at Bondi Harvest HQ… but for good reason!

We outlined all of the amazing health benefits and detoxifying qualities of beetroot as part of our The Best Detox Foods series. If you didn’t catch it, go back and have a read…

We teamed up with the beautiful Madeleine Shaw to make some wildly pink Beetroot and Buckwheat Crepes.
Look at that colour! It doesn’t even look real.

Then there was that ridiculously easy Beetroot Risotto, that we gave a Bondi Harvest spin to by using quinoa instead of the traditional arborio rice.

And last but not least, our Roasted Beetroot, Goat’s Cheese and Thyme Dip. It’s perfect to tote along to your next dinner party or BBQ and it tastes pretty great with the chips above.

…our take on the classic potato chip, using beetroot and everyone’s favourite superfood vegetable kale.
Yep, healthy chips actually exist!

What are some of your favourite things to make with Beetroot?

We’d love to hear about them in the comments below.

I love roasting beetroot and then keeping it in the fridge to thrown into salads or mix with chickpeas to make a beetroot hummus. So delicious!! I’m so glad to see that beetroots are getting some much deserved love

In my country, we make a special salad out of beetroot: whole boiled beetroot, grated finely, mixed with a horseradish(according to taste) and then the dressing is added which is made out of little water, vinegar, little salt and sugar and cumin, very very tasty, do give a try……we almost always serve this with boiled eggs on the side, it’s especially eaten during an Easter season. 🙂

At last some raitonality in our little debate.
