How To Make Healthy Vegan Sausage Roll Recipe
Everyone loves a sausage roll
Delicious and tender spice-packed sausage filling wrapped in crunchy puff pastry; what’s not to love ?
No longer does the sausage roll have to be an indulgent and guilty treat, I created this recipe to be as nutrient-dense, plant-based and super easy. My sausage roll filling is a mix of Pulled Oats plant-based protein, sweet potato, herbs, nutritional yeast, and other wholesome ingredients.
My simple recipes swaps, buttery pastry for a crunchy wholegrain wrap that when baking is just as delicious and crunchy yet guilt free.

Ingredients
240g pulled Oats
1 onion, diced
1 garlic clove, minced
1 cup sweet potato, diced or grated
1 bunch coriander, chopped
1 lemon
½ tsp fennel seed
½ tsp cumin seed
1 cup nutritional yeast
3-4 whole grain wraps
Instructions
Preheat oven to 180 degrees
In a pot on a medium add 1 tbsp of olive oil, add onion, garlic and sweet potato and cook until tender.
Once tender add pulled oats, coriander, fennel seed, cumin seed and nutritional yeast and cook for a further 5 minutes until combined.
Lay your wraps on the bench, spoon a generous amount of filling in the middle then carefully roll up your sausage rolls to make a large cigar.
Slice your rolls to your desired size, place on a baking tray lined with parchment paper and bake for 15 minutes until golden, or place in the freezer for later use.
Serve with your favourite sauce.
