A fresh take on the classic french toast, like a jam-filled sandwich, we’ve skipped the egg and made a binding agent with grounded chia seeds. Ideal for those with egg allergies or just prefers a vegan alternative.
With the help of Chia Co we present to you, Vegan Chia Seed French Toast, stuffed with strawberry chia jam.

Ingredients
Berry Chia Jam
- 1 cup mixed berries (frozen or fresh)
- 60 ml apple juice
- 2 tbsp Chia Co. Chia Seeds
- 1 tbsp maple syrup
- 1 vanilla bean split, seeds scrapped
- 1/2 tspn thyme leaves
- zest from 1 lemon finely grated zest
Chia French Toast
- 1 tbsp chia seeds grounded into a fine meal so seeds are undetectable
- 1/2 tbsp maple syrup
- 1 cup unsweetened almond/hemp milk
- pinch thyme leaves
- 1/2 tspn ground cinnamon
- 1 vanilla bean split, seeds scrapped
- 4-5 slices of bread
Instructions
Berry Chia Jam
- Place the berries, apple juice, chia seeds, maple syrup, vanilla seeds, thyme and lemon zest in a blender.
- Blend for about 30 seconds, just long enough to break up and combine everything.
- Store in an airtight container in the fridge for up to 1-2 weeks.
Chia French Toast
- Mix all ingredients except the bread in a large, shallow bowl. Place in the fridge to activate for 10-20 minutes.
- Preheat griddle to medium heat and grease with olive oil.
- Make a jam sandwich by buttering two slices of bread with chia jam then placing them together.
- Dip and soak both sides of your jam sandwich in the batter for about 20 seconds on each side. If your bread is dry, leave it in a little longer. If you’re using sandwich bread, it should only need 25-30 seconds total to soak.
