Recipe Name: One Tray Autumn veggies Orzo salmon

Ingredients
Option below swap all veggies for two cups of mixed frozen veggies
1 clove garlic, minced
1 punnet cherry tomatoes
½ cup pumpkin, diced fine
½ cup corn, kernels removed
1 red chili, sliced fine
2 tbs olive oil
½ tsp thyme, leaves picked
1 cup orzo, uncooked
1 ½ cups chicken stock or water
1 cup peas
1 300g Tassal Salmon, skin off
Rind of two lemons
Method
Preheat oven to 200 degrees
In a baking tray toss together garlic cloves, cherry tomatoes, diced pumpkin, corn, sliced chili, thyme & olive oil and bake for 15 minutes until golden and blistered.
Top with orzo, peas, stock, salmon and lemon rind and bake for another 15-20 minutes until orzo has absorbed all liquid and your salmon is cooked through.
