How To Make Roast Beetroot Dip

This dip literally takes 2 minutes to whip up… if you have leftover roasted beetroot.
If you’re starting from scratch, preheat oven to 200°C, wrap beets in foil and roast for about 1 hour or until tender.

- 3 medium sized beetroots Roasted
- 100g goats cheese or ricotta
- 5 sprigs thyme
- 1/4 cup almonds
- 3 tbs coconut oil
- 2 cloves garlic roasted
