This is one of those brekkies that looks super impressive and sounds like it’s going to take forever, but is literally in your bowl ready to devour in less than 15 minutes.

Use whatever fruit you have on hand. Pears, nashis, or plums would taste great too.

  • 5 tablespoons honey
  • 2 cups mixed nuts
  • 1 vanilla bean
  • 2 apples, sliced
  • 1 tablespoon water
  • 2 cups yoghurt
  • Seasonal fruit

  • In a medium saucepan pan add 3 tablespoons honey and cook for about 5 minutes, or until caramelised. Add nuts and toss to coat in honey. Cook for another 5 minutes and then turn out of pan.
  • In the same pan add sliced apples, remaining honey and water. Cook for about 7-10 minutes, or until tender.
  • In a bowl add yogurt, cooked apples, nut crumble and fresh fruit .

  • 25cm pan with lid
  • Chopping board
  • Camp suitcase stove
