What I love about this recipe is you only need 2 ingredients for a gorgeous vanilla extract/Essence from scratch: vanilla beans and vodka. using a sharp knife slice open your vanilla beans, use the back of the knife to scrape out the beans. Plance vanilla beans infuse and vodka in a jar and let infuse for at least 8 weeks, but for optimal flavor, wait at least 6-12 months before using. Homemade vanilla is more cost-efficient than store-bought options.

Single Fold vs. Double Fold Vanilla extract / essence
Single-fold vanilla extract is what most manufacturers of commercial extract make. A single-fold extract is required to use (13 ounces) 400g of vanilla beans per 3.7lt (1 gallon) of vodka.
Double-fold vanilla extracts are what professional bakers prefer to use, it holds a superior flavor and fragrance, It’s super potent and gives your baked goods and desserts a gnarly vanilla flavor. Double-fold vanilla extract is required to be made with 650g (23 ounces) of beans per gallon 3.7lt (1 gallon) of vodka. . And double-fold vanilla extract is much more expensive but in my opinion worth the cost.

Single-fold

Instructions
- To make vanilla essence simple mix vanilla bean and 80 proof vodka in a jar and let infuse for 6+ months until fragrant and dark.
