2 small sweet potato
1 cup corn
1 bunch coriander
1 red pepper, diced
1 cup black or white beans
1 tbsp oregano leaves
1 tsp smoked paprika
1 clove garlic, minced
1 cup parmesan cheese
Carefully using a mandoline slice sweet potato into thin chips about 1 cm thick .
Lay the sweet potato slices on a tray and brush with olive oil then seasoned with salt and pepper, bake at 180°c for 10-15 minutes until golden.
To make meatballs mix mince, corn, coriander, red peppers, beans, oregano, paprika, garlic and onion in a bowl. Roll into balls
Layer your sweet potato chip on an oven proof plate, top with meatballs then sprinkle with cheese and bake in the oven for 10 minutes until the meatballs are cooked and the cheese is golden.
