Teas and elixirs - Cocoa nib tea from the Bondi Harvest TV series, Summer Cooking

Ingredients
  • 1 cup cacao nibs
  • 1 cinnamon stick
  • 1 tablespoon honey
  • teaspoon cayenne pepper
  • 500 ml Water boiled
  • 1 tbls cocoa nibs for garnish
Instructions
  1. Combine the cacao nibs, cinnamon, honey, cayenne pepper and 500ml (17 fl oz/2 cups) water in a small saucepan. Bring to a gentle simmer and cook for 10 minutes. Strain and serve warm.

Turmeric Chai recipe form the Bondi Harvest TV series, Summer Cooking

Ingredients
  • 3 green cardamom pods bruised
  • 1 cinnamon stick
  • ¼ teaspoon fennel seeds
  • ¼ teaspoon black peppercorns
  • 1 slice fresh or 1 teaspoon ground turmeric
  • 2 slices fresh ginger
  • 1 teaspoon black tea leaves
  • 250 ml 9 fl oz/1 cup milk
  • 250 ml 9 fl oz/1 cup water
  • 1 teaspoon honey optional
Instructions
  1. Combine the cardamom pods, cinnamon, fennel seeds, and black pepper in a dry saucepan. Cook, stirring, over medium heat for 2 minutes or until fragrant and toasted.

  2. Add 250 ml (9 fl oz/1 cup) milk, 250ml (9 fl oz/1 cup) water and two slices of ginger place the pot back on the stove and slowly bring to a simmer.

  3. Add tea leaves, turmeric and honey and simmer for 2-3 minutes add your honey, Strain and enjoy.

Ingredients
  • 500 ml boiling water
  • 1 lemon sliced into wedges
  • 5 strawberries sliced
  • 4 slices ginger
  • 1 tablespoon chamomile tea leaves
  • 1 teaspoon honey
  • 1 stick of mint
  • 1 cinnamon stick
  • 1 teaspoon fennel seeds
  • 2 sprigs lavender
  • 1 sage leaf
  • zest of . lemon in wide strips
  • 1 teaspoon honey
Instructions
  1. Boil your water. 

    In a large jug add lemon, strawberries, ginger, chamomile, honey and mint add 500 ml (17 fl oz/ 2 cups) boiling water.

    Steep your tea for 5 minutes and enjoy.
